Vilnius-style herrings have an aromatic pepper and tomato stuffing. The snack consists of products that Poles absolutely love – peppers, pickled cucumber and onion. These additions give the fish a distinctive flavor. It is worth serving them on a vegetable salad or with mayonnaise so that the flavors complement each other perfectly.
Ingredients:
- 700 g of salted herrings,
- 2 onions,
- 50 g of tomato puree,
- a spoon of tomato paste,
- pepper,
- pickled cucumber,
- 2 allspice,
- a pinch of ground sweet pepper,
- a few cloves to taste,
- salt and pepper
- milk for soaking herrings,
- oil for frying.

Rinse the herrings under cold water to remove excess salt, then soak them in milk for 2-3 hours to soften their taste. After this time, strain them and dry them with a paper towel.
Peel the onions and cut into small cubes. Wash the pepper, remove the seeds and cut into small cubes. Chop the pickled cucumber into small cubes, draining the juice.
Heat a little oil in a pan, add the onion and fry until translucent. Then add the peppers and fry for another 5 minutes until softened. Add tomato puree, tomato concentrate, allspice, ground sweet pepper and a few cloves. Mix and simmer over low heat for 5 minutes. Finally, add chopped pickled cucumber, season with salt and pepper to taste.
Spread a thin layer of the prepared filling on each herring fillet. Roll the fillets into tight rolls, starting from the narrow side. You can fasten the rolls with a toothpick to prevent them from unrolling. You can serve the rolls immediately, but they taste best after cooling in the fridge for a few hours.
Just before serving, decorate the herrings Vilnius style with a slice of lemon and pepper cut into sticks.
