It often happens that after a large dinner we have quite a lot of leftovers. Potatoes are certainly among them. When reheated the next day, they don’t taste as good. Therefore, many people may wonder how to use the remaining leftovers so that they do not go to waste. The answer is surprising – it is worth making delicious croissants out of them.

Croissants made from yesterday’s potatoes will surely surprise many people. The preparation method is very simple, and the recipe does not require too many ingredients. Even people who don’t bake very often can prepare these sweets. or tea – guests will be delighted.

What do you need to prepare croissants from yesterday’s potatoes? Here is the list of ingredients:

  • About 250 g of cooked potatoes (about 3 not very large pieces);
  • 2 cups of wheat flour
  • ¾ cup of sugar;
  • ¼ teaspoon of vanilla extract or half a teaspoon of vanilla sugar;
  • 2 teaspoons of baking powder;
  • 1 tablespoon of rapeseed oil;
  • 2 eggs.
  • Jam, jam or chocolate cream to fill the croissants.

Preparation method:

  1. Make sure the potatoes are at room temperature. Then crush them with a fork or masher.
  2. Crack one egg into the potatoes, then add sugar, baking powder, oil and vanilla extract (or vanillin sugar). Don’t forget about the flour – it should be sifted through a sieve.
  3. Knead the dough thoroughly, divide the dough into two, and then roll it out on a floured surface. Cut medium-sized triangles in the dough and place a teaspoon of jam, jam or chocolate cream on their base. Roll the triangles into croissants and place them on a lined baking tray.
  4. Beat the egg and then brush the triangles with it. Bake them in an oven preheated to 200 degrees Celsius. After about 15 minutes they should be ready (they must be golden brown).

These unique croissants will surely appeal to you and your guests. You can serve them with coffee or tea – then they taste even better.
