Croquettes with cabbage and mushrooms are a traditional dish served on Christmas Eve. If you want to surprise your guests this year, be sure to prepare a stuffing with mushrooms, cheese and other additions that will make this dish much better than the classic one. We present a recipe for croquettes with a completely new filling.
There is nothing better than aromatic stuffing hidden in delicate pancakes and crispy breading. These are croquettes with cheese and mushrooms. You probably have the ingredients for them at home.
What ingredients do we need to make cheese and mushroom croquettes?
Ingredients for pancakes:
- 1 cup of flour;
- 1 cup of milk;
- 0.5 cups of water;
- 2 eggs;
- 1 tablespoon of oil;
- a pinch of salt.
Ingredients for the stuffing:
- 0.5 kg of mushrooms;
- 1 onion;
- 300 g of yellow cheese;
- 1 tablespoon of cream;
- 1 tablespoon of tomato paste;
- spices: salt, pepper, Provencal herbs.
Ingredients for the breading:
- egg;
- breadcrumbs;
- oil for frying.
First, let’s start making pancakes. To do this, mix flour, milk, water, eggs, oil and salt until smooth. Fry the pancakes from the prepared dough in a well-heated frying pan until they are golden brown on both sides.
In the next step, we start making the stuffing. First, cut the onion into cubes and the mushrooms into slices. Fry these two ingredients in a pan with heated oil until the water from the mushrooms evaporates. When everything cools down, add the remaining products, i.e. yellow cheese, cream and tomato paste. Mix everything to create a uniform mass. Finally, season the filling with spices as desired.
Once we have made the stuffing, we can move on to rolling it: spread the mushroom and cheese filling on each pancake and roll it into a tight roll. Then we prepare the breading, i.e. coat each croquette in egg and then in breadcrumbs.
The final stage of making croquettes is frying them in hot oil until golden brown on both sides. We can also bake them in an oven preheated to 200 degrees Celsius. Baking time is 20 minutes.
We serve croquettes on the Christmas Eve table . We can also create a dinner dish out of them. In this case, we serve them with potatoes and your favorite sauce, e.g. tomato or garlic. They taste great with a light salad of arugula, cucumbers and tomatoes.
