Carp is a Christmas Eve tradition that has become embedded in Polish culture. It is supposed to symbolize longevityand whoever ate it on Christmas Eve was supposed to enjoy a long life. Even these beliefs may not convince you to consume the fish if the carp has a muddy taste.
Carp is a freshwater fish that usually lives in farms. Those specimens that do not come from organic farms grow up in ponds overflowing with other fish. Are poorly fed, crampednot having a suitable living environment. After growing to the appropriate size are transported over long distanceswithout ensuring proper conditions.
As a result, the fish become stressed and they begin to secrete too much cortisol and lactic acid. This acidifies their meat and, as a result, the carp will taste muddy. Additionally, the taste may be influenced by the fact that they live at the bottom of water reservoirs, where silt accumulates.
Before frying the carp it is necessary to get rid of it it has a muddy taste. There are many ways to do this, but not all of them are as effective as we would expect. Don’t mess with lemon, strong herbs or water with salt, just use this proven method.
We will get rid of the muddy taste from carp if we’ll soak it in buttermilk. Pour the drink over the fish and, to enhance the effect, you can add chopped onion. Cover the vessel with such contents with foil and set aside in the refrigerator for 4 hours.
After this time, remove the carp from the brinedry with paper towels and lightly salt each side. Place the fish back in the refrigerator for another 2 hours. After such treatment, the carp should no longer have a muddy taste. Just roll it in flour and fry it in well-heated oil.
