Oranges were once a luxury item and they were even given as Christmas gifts. Today you can please your loved ones by adding these healthy citrus fruits to your dessert. The orange cake is extremely easy to make. All you need to do is buy and cut the ingredients and then mix them into the mass. The dough goes into a cake tin, so it is then cut as simply as the popular one. The baked goods come out soft and very moist (thanks to the addition of orange) and a bit crunchy (thanks to the nuts). While baking, the entire house smells of Christmas.
Ingredients:
- 200 g of butter,
- 170 g of fine sugar,
- 3 eggs,
- 180 g cake flour,
- 30 g of potato flour (+ 1-2 tablespoons for dusting the oranges),
- 1.5 teaspoons of baking powder,
- 2 oranges,
- 100 g walnuts or pecans.
How to do it:
Wash the oranges thoroughly, especially the ones from which you get the peel (it is best to choose those from organic farming – they do not contain toxic preservatives). Grate the skin from the fruit using a fine grater. Only wipe off the thin outer layer – not the bitter white albedo that lies underneath. Cut the orange and squeeze the juice from it.
Peel the second orange, carefully removing all the albedo. Cut the fruit into small cubes. Just before combining with the dough, sprinkle evenly with potato flour.
Chop the nuts into fairly large pieces.
Cream the butter (at room temperature) with sugar until light and fluffy. Gradually add one egg at a time, and then add the grated orange peel.
Sift both flours and baking powder into a separate bowl. Add to the dough in batches – alternating with orange juice. Mix the dough with a spatula or mixer at low speed – just until the ingredients are combined.
Add nuts and orange pieces to the dough. Mix briefly. Pour the dough into a 35 cm long cake tin that has been greased and sprinkled with breadcrumbs. Place in the middle level of the oven preheated to 170°C. Bake for about 45 minutes – until the stick is dry.
