Aromatic herrings under a blanket. The hit of borderland cuisine must appear on the Christmas table

Herring they often appear on the Christmas table – and that doesn’t surprise us at all. This fish is easy to prepare and very popular also because it can be prepared in many ways.

This time we propose herrings under the blanket originating from the borderland cuisine. Extremely aromatic thanks to the presence of beets, onions and pickled cucumbers in the recipe, this dish is perfect for a family gathering.

  • 3 herring fillets (in salted mortar),
  • 1 onion,
  • 2 beetroots,
  • 3 potatoes,
  • 2 carrots,
  • 3 eggs,
  • 3 pickled cucumbers (medium size),
  • mayonnaise,
  • salt and pepper to taste,
  • milk (for soaking herring).

Place the herring fillets in a bowl of cold water. Leave them like this until they reach the taste you like. If they were initially very salty, replace the water with fresh water every half hour. At the end of soaking, pour a small amount of milk (instead of water) over the herrings – this will make them more delicate.

Peel the root vegetables and cook in salted water until soft (cook the beets separately). When the vegetables cool down, grate them (each one separately) on a coarse grater. Boil the eggs hard (8-10 minutes after the water boils). Peel and separate the whites from the yolks. Cut the egg whites into cubes and chop the yolks finely.

Cut the pickled cucumbers into cubes.

Dry the herring fillets with a paper towel and cut into small cubes. Chop the onion finely. Mix with herrings and spread over the entire surface of a large plate.

Place the grated potatoes on the layer of herrings and onions. If you want, sprinkle them with pepper and spread a thin layer of mayonnaise. Place a layer of cucumbers on the potato layer, then a layer of carrots, a layer of egg whites and a layer of beets. Cover each with mayonnaise and – if desired – season with pepper.

Spread mayonnaise on the beetroot layer of the salad, giving it a heaping shape. Decorate with chopped egg yolks.

Herrings taste best the next day. Store them in the refrigerator.
