Herring is a type of snack that is perfect for both family celebrations and a party with friends. It goes perfectly with salads and fresh bread. Gajowy’s herrings are not a classic fish dish with cream and onion, they have a more savory taste. This is an exceptionally festive combination – the accessories include: dried mushrooms and plumsadding a wonderful aroma to the appetizer.
Ingredients:
- 500 g herring flakes a la matjas,
- 50 g dried mushrooms, you can use boletus mushrooms,
- 8 seedless dried plums,
- 4 large onions,
- 5 juniper berries,
- half a teaspoon of marjoram,
- salt and pepper to taste.
Marinade:
- 500 ml of water,
- 100 g of tomato paste,
- 70 ml of spirit vinegar,
- 2 bay leaves,
- 2 balls of allspice,
- 2 cloves,
- 2 peppercorns,
- half a teaspoon of sugar.
How to do it:
It is best to start preparing gamekeeper’s herring two days in advance. To do this, soak the fish in water and leave in the refrigerator for several hours, preferably overnight. Soak the mushrooms in a separate container, also leaving them overnight (but outside the refrigerator).
The next morning, boil the mushrooms in the same water in which they were soaked. After cooking, leave the mushrooms to cool, then dry them and cut them into smaller pieces.
Remove the herring flakes from the water, dry them and cut them into small pieces. Peel the onion and cut into slices. Pour oil into the pot and add the onion. When it begins to glaze slightly, add bay leaves, allspice, peppercorns and cloves. When the onion is golden, pour water over everything, add dried tomatoes, tomato paste, sugar and vinegar. Season the brine to taste with salt and pepper. Stew everything covered for 5 minutesand then leave the filling to cool.
Add the previously prepared herrings to the cold brine, mix everything together and set aside in a cool place. Leave the herrings to chew – the snack tastes best the next day.
