You want something healthy salad for dinner? Although vegetables are currently not as good as those that can be purchased in summer, it is worth finding a place for them in your daily menu. Cucumber and pepper salad perfect for chicken or fish dishes. You can also wrap it in a tortilla spread with sandwich cheese, add feta cheese and take it with you to work or school. It’s perfect as a healthy lunch.
Below you will find the basic one recipe for cucumber and pepper salad. It’s worth adding to it cheese, e.g. feta or mozzarellathey will fit well here too black or green olives.
Ingredients:
- 2 red peppers,
- 1 tomato,
- 1 green cucumber,
- red onion,
- 3 tablespoons of olive oil,
- 1 tablespoon of wine vinegar,
- 1 clove of garlic,
- 1 teaspoon of oregano,
- salt and pepper to taste.
Remove the seeds from the peppers and cut them into medium-sized cubes. Also divide the tomato into smaller parts. First, cut the cucumber lengthwise twice and then into slices. Chop the red onion into slices. Combine vegetables in a bowl.
Mix olive oil, wine vinegar, oregano, salt and pepper. Press the peeled garlic clove and add it to the sauce. Stir again and add to the vegetables, combining all ingredients gently. You can serve the salad to the table immediately.
