You can find many different cheesecake recipes for the holidays on the Internet and in cookbooks. If you are looking for last minute cakes or you are already looking for cheesecake for New Year’s Eveto baked cheesecake with raspberries sounds like the perfect option. It is a combination of an easy-to-prepare shortcrust base with a cheese filling that melts in your mouth. In addition, there are juicy raspberries that add color to the dessert. Thanks to the sour taste of these fruits, the whole thing is pleasant, moist and not too sweet.
Ingredients:
Bottom:
- 500 g of wheat flour,
- 250 g of butter,
- 40 g sugar,
- a flat teaspoon of baking powder,
- 3 yolks,
- 2 eggs.
Cheesecake filling:
- a kilogram of cheesecake cottage cheese from a bucket,
- 6 eggs,
- 200 g sugar,
- 70 g of soft butter,
- 2 tablespoons of vanilla pudding,
- a pinch of salt for whipping egg whites,
- 200 g malin.
How to do it:
Prepare the shortcrust base. Sift the flour into a bowl along with the baking powder. Pour in the sugar. Take the butter, which should be cold, out of the fridge and chop it. Add the remaining ingredients along with the eggs and knead the dough vigorously – so as not to heat the butter too much. When it has a smooth consistency, form a ball, wrap it in cling film and put it in the fridge for 40 minutes.
Take the shortcrust crust out of the fridge. Divide the dough into two parts – in the proportions of 1/3 and 2/3. Sprinkle the bottom of a 26 cm cake tin with flour. Spread out most of the dough. Prick with a fork. Spread the smaller part over the sides and smooth it out. Preheat the oven to 180 degrees Celsius and put in bake the dough for about 10 minutes. Remove and set aside while preparing the mass.
Start making the cheesecake mass. Place the yolks in a tall dish and add sugar and soft butter. Blend. Then put the cottage cheese into a large bowl and pour in the mixed mass. Add pudding powder. Mix everything gently. You can do it with a mixer, but at low speed, just until the ingredients are combined. Separately, beat the eggs with a pinch of salt and finally mix the foam into the mixture.
Transfer everything to the baked base. Place washed and dried raspberries on top. Bake first 20 minutes at 180 degrees Celsius, then reduce the temperature to 150 degrees and leave the cheesecake for another 70 minutes. After baking, do not open the oven door immediately. Wait until it cools down slightly.
