Pickled cucumber salad and feta cheese is an interesting option for a quick dinner or a light and nutritious lunch. It is also great as an addition to fatty meats. The dish has a very pleasant, slightly sour and salty taste combined with the sweetness of peppers and onions. Parsley adds an interesting and herbal aroma. It looks elegant and refined on the table. It will also be a great option for people on a vegetarian diet.
To prepare this salad you need:
- 3 pickled cucumbers,
- ½ red pepper,
- ½ yellow pepper,
- 1 red onion,
- 200 g of feta cheese of your favorite flavor,
- 1 handful of fresh parsley,
- 2 tablespoons of olive oil,
- 2 tablespoons of lemon juice,
- ½ grated lemon peel,
- 1 clove of garlic,
- salt and pepper.
Coarsely chop the pickled cucumber into slicesand then into quarters. Cut the peppers into cubes and chop the onion into slices. Cut the cheese into cubes or crumble it between your fingers and tear the parsley into leaves. Mix all ingredients except onion in a bowl. Save this one for last.
In a separate bowl, mix olive oil, lemon juice, pressed garlic, salt, pepper and lemon zest. Pour the dressing over the salad and mix everything well. Place onion slices on the side.
Serve the pickled cucumber salad immediately after preparation or chilled in the refrigerator, as a stand-alone dish or as an addition to a dinner course.
