Not everyone knows that poppy is a symbolic ingredient whose presence during holidays was supposed to attract wealth and prosperity. For this reason, it can be found on the table in many different forms during Christmas. If you don’t like the taste of this ingredient, it doesn’t mean you have to say goodbye to tradition. All you need to do is use the recipe for a simple sponge cake, whose delicate aroma will please everyone.
Poppy seeds can be a difficult ingredient to work with in the kitchen. It is often used in a form that is time-consuming to prepare. You should first boil the poppy seeds, then grind them – preferably twice – and finally put them back into the pot and season. For this reason many people give up preparing traditional dishessuch as poppy seed cake or kutia. Fortunately, there are easier ways to include poppy seeds in your Christmas menu.
One of them is a simple, pounded cake in which poppy seeds will be present, but in small amounts. Thanks to this the aroma of the cake will be more subtle and the taste of poppy seeds will be less intense. The second key ingredient in the cake is ground walnuts, which give the mass a deep taste and smellperfectly balancing the characteristic poppy taste. Despite its simplicity, the cake contains favorite aromas that perfectly fit the Christmas atmosphere. It will be a great companion for gingerbread and cakes with spices. Together they will provide a festive atmosphere on our table.

Ingredients:
- 250 g of butter,
- 1 cup of sugar,
- 1 cup of wheat flour,
- 5 eggs,
- 2 teaspoons of baking powder,
- 4 tablespoons of poppy seeds,
- 200 g ground walnuts,
- additionally: chocolate icing, nuts for sprinkling.
We separate the whites from the yolks. Place the butter and sugar in a large bowl. Beat until fluffy, then gradually add the yolks, continuing to mix. Add the sifted flour, baking powder and poppy seeds, mixing constantly. Finally, add the nuts to the mixture. In a separate bowl, beat the egg whites until stiff. Put them into the dough and use a spatula gently combine with the mass. Put everything into a loaf pan, lined with baking paper and put in the oven preheated to 180 degrees C. Bake for about an hour. After this time, remove from the oven and leave to cool.
When the cake is cold, we can cover them with chocolate icing. The simplest one can be made by mixing chocolate melted in a water bath with a spoon of butter. You can also sprinkle the cake with walnuts for decoration.
