In this recipe, wild mushrooms are replaced with champignons and sauerkraut – with yellow cheese. To prepare Christmas Eve croquettes with cheese you will need:
- ½ cup of breadcrumbs,
- 1 teaspoon of tomato paste,
- 2 onions,
- 230 g of wheat flour + 2 tablespoons,
- 250 ml of milk,
- 250 ml of water,
- 5 eggs,
- 300 g of yellow cheese,
- 4 tablespoons of vegetable oil + for frying,
- 800 g mushrooms,
- a few sprigs of parsley,
- salt, pepper.
You can use plain water for the pancake batter, but you can just as easily use it sparkling waterand even non-alcoholic beer. The above ingredients yield approx 10-14 pancakes.

Start by preparing and frying the pancakes. Pour flour into a bowl, add three eggsmilk, water, oil and a pinch of salt. Mix everything for a few minutes to obtain the perfect consistency without lumps. You can also set the dough aside for about half an hour. Fry the pancakes in a very hot panabout a minute on each side. By adding oil to the dough, you don’t have to re-grease the pan after each batch of pancakes. Remember that Croquet pancakes should not be super thinso add some more dough to the pan.

Then prepare the filling for the croquettes. Peel the onion and chop finely, grate the cheesecut the mushrooms into slices and chop the parsley. Heat some oil in a pan (you can also use clarified butter) and fry the onion in the fat. Then add mushrooms and fry until the water evaporates. Place the onion and mushrooms in a bowl to cool. Add tomato paste, grated cheese and parsley and mix everything. Place a portion of the filling onto the pancake. Fold the sides inwards, fold over the top of the cake and roll into a croquette.

Prepare three plates or bowls. Pour two tablespoons of flour into the first one, add two eggs into the second one, and breadcrumbs into the third one. Beat the eggs with a fork. Coat Christmas Eve croquettes with cheese first in flour, then in beaten egg, and finally in breadcrumbs. Pour oil or clarified butter into the heated pan. Fry the croquettes until golden brown, turning oftenso that they are perfectly toasted. You can serve such Christmas Eve croquettes with cheese as a dish for Christmas lunch or dinner, or as an addition to Christmas Eve borscht.
