You want to prepare something interesting for guests for a New Year’s Eve party? Get inspired a recipe from Turkish cuisine and prepare a crunchy snack with spicy meat stuffing. The original rolls combine the features of yeast and puff pastry. The finished dish tastes great both warm and cold.

The secret of this dish is a delicate, yeast dough and a delicious stuffing made of ground pork shoulder, add onion, chili, salt, pepper, parsley and honey.

Ingredients for the cake:

  • 400 g of wheat flour,
  • 250 g of warm milk (about 35°C),
  • 1 teaspoon of sugar,
  • 1 teaspoon of salt,
  • 40 g of fresh yeast.

Ingredients for the stuffing:

  • 300 g of ground beef shoulder,
  • 3 small onions,
  • 1 tablespoon of tomato paste,
  • about 1 teaspoon of chili flakes,
  • 1 teaspoon of honey,
  • 2 tablespoons of chopped parsley,
  • salt, freshly ground pepper (to taste).

Additionally:

  • 3 tablespoons of olive oil,
  • 3 tablespoons of liquid butter.

Crumble the yeast into the milk. Add sugar and mix thoroughly (until the yeast dissolves). Set aside in a warm place, covered with a cotton cloth. After about 15 minutes, when the leaven has significantly increased in volume, combine it with the flour and salt sifted through a sieve. Knead everything into a uniform, smooth dough and leave to rise further (in a warm place, covered) for about an hour.

Chop the onions finely and combine them with the minced meat in a bowl. Add tomato paste, chili flakes (you can add a little more or less than a teaspoon – depending on whether you like spicy food), honey, parsley, salt and pepper.

Combine butter and olive oil. Knead the risen dough again. Divide them into 10-12 portions. Roll out each portion of dough in turn on a lightly floured board (you can also simply stretch the dough with your hands). Spread the obtained pancakes on top with a mixture of olive oil and butter. Fold it like an envelope (to enclose the fat inside), in the shape of a square. Place the prepared squares on an oven tray lined with baking paper. Leave for 10 minutes covered with a cloth.

Make an indentation in each square of dough. Place the stuffing in the recesses (divided into 10-12 portions). Lightly press the stuffing inside, deepening the hole.

Put the tray in the oven preheated to 180°C. Bake for about 30 minutes – until the cake is golden brown.
