The Portuguese have a long relationship with cod and it all began more than 500 years ago when, on sea voyages, sailors discovered that dried and salted cod was the perfect food for long journeys, as it could be stored for several years. in the holds of ships.

The recipe only takes 20 minutes with the Air Fryer

To carry out this recipe you will only need three pieces of soaked cod, milk or vegetable drink, two onions, three chopped garlic cloves, 60 milliliters of olive oil, 20 milliliters of vinegar, nine pre-cooked potatoes, cooked greens and one aromatic herb to taste. Firstly, place the cod fillets in a baking dish and add milk until half full.

Let it marinate in milk for an hour to hydrate the cod well, turning halfway through the time. Then drain the cod and dry with paper towel. In a bowl mix the chopped garlic, olive oil, vinegar, rosemary and salt. Cut the onions into wedges and place them in the roasting pan and, on top, place the cod fillets.

To finish, apply the olive oil and garlic sauce and place the potatoes next to the cod, watering them with what’s left of the sauce. Once the last step is complete, all that remains is to place everything in the Air Fryer at 200 degrees for 20 minutes.
