To conjure up a healthy and tasty dinner, just combine a few colorful vegetables and aromatic spices. Dietary vegetable stew without meat is also very fillingwill deliver lots of vitamins, minerals, antioxidants and valuable dietary fiber. Perfect for lunch or dinner. Additionally warms up great, that’s why it’s worth eating it in winter.
Below you will find the basic one recipe for vegetable stewbut nothing stops you from diversifying it with additional ingredients. They will fit perfectly here broccoli, green beans, Brussels sprouts, green peas, garlic, tomatoes, and carrots. This dish is a great idea when you want to clean out the fridge.
Ingredients:
- 100 g mushrooms,
- 1 red pepper,
- 1 green pepper,
- 1 red pepper,
- 1 carrot,
- 1 onion.
Spices:
- 1 teaspoon of soy sauce,
- 1 teaspoon of potato starch,
- 1 allspice,
- 1 bay leaf,
- half a teaspoon of ground sweet pepper,
- 200 ml of water or chicken stock,
- salt and pepper
- olive oil for frying.
Wash the mushrooms, dry them and cut them into strips. Remove seeds from the peppers and chop them into the same pieces. Peel the carrot and cut into sticks. Chop the onion into thin slices.
Heat some olive oil in a large frying pan. Fry the onion until translucent, then add the mushrooms. Fry together until the mushrooms soften and release their juice. Add the carrot and fry for about 3-4 minutes. Add peppers, allspice and bay leaf to the fried ingredients. Season with ground paprika, salt and pepper. Pour water or chicken broth into the vegetables and then add soy sauce. Cover and simmer for about 15-20 minutes. Finally, if necessary, dissolve the starch in a little water. Pour into the pan and stir vigorously. Boil and serve the dietary vegetable stew with bread, groats or plain.
