We can prepare many dishes based on beans, but due to the high content of fiber and simple sugars, this product is known to cause gas and flatulence. The baking soda trick will solve this problem.
Beans contain a complex carbohydrate chain, which consists of simple sugars, which are difficult for the body to digest. When these ingredients enter the stomach and small intestine, they are not digested and are only broken down in the large intestine. A side effect of this phenomenon is carbon dioxide (sometimes also methane), and this leads to the accumulation of gases in the body and flatulence. The fiber content only enhances this effect because it is digested in the same way.

A 2023 study published in the journal Foods confirmed the effectiveness of using baking soda to eliminate flatulence problems caused by beans. How does it work? Baking soda is slightly alkaline, which means it can neutralize acids. When added to beans, it breaks down their cell walls, as a result of which the body is able to digest these seeds more easily – without gases and flatulence.
In addition the addition of baking soda makes the beans cook faster and retains more nutrients.

First, we need to carefully measure the amount of beans we use. We shouldn’t use more than 1/4 teaspoon of baking soda for each standard cup of dried beans. Baking soda can be used in two ways:
- Soaking beans in baking soda – we can put the dried seeds in a pot with water (the water should cover the beans with a layer of at least 5 cm) and add baking soda according to the number of cups of beans used. Leave the seeds to soak for at least 8 hours, preferably overnight. The next day, rinse thoroughly and cook.
- Cooking beans with baking soda – the second option is to cook the beans directly with baking soda. In this case, add a measured amount of baking soda to the grana with beans and bring to a boil. Cook the soaked seeds for 30-60 minutes. For unsoaked beans, it will take 1-2 hours. After cooking, we can rinse the seeds to get rid of any baking soda residue.
Baking soda is the best option – an alternative is to soak the beans in water for a long time (preferably overnight), but this method is less effective.
