The classic recipe for pancakes requires a few basic ingredients: flour, milk, eggs and a pinch of salt. “I put a little more baking powder in them. They are then much fluffier,” recommends reader Jana from Pilsen.

But her friend Ladislava triumphs over her with her advice, when she adds either a little rum to the pancake batter (it replaces the baking powder) and a little mineral water, which adds deliciousness, fluffiness and softness to the pancakes.

Dough without flour

Recently, however, a recipe for pancakes without milk, flour and eggs has appeared on the Internet. “Is it even possible?” both women shake their heads, saying that you can’t make pancakes without this proven base. “But it goes…” says the culinary editor from the website GoodFood and reveals what it’s all about: “My favorite pancakes – or fritters – made from oatmeal with caramelized pears. The pancakes have a slightly denser texture than classic pancakes, but they are milk-free and much healthier. Try them too.”

Oatmeal base

The procedure is simple: In a large pot, mix 250 ml of almond milk, ½ teaspoon of crushed cloves, 1 teaspoon of ground nutmeg and 3 teaspoons of ground cinnamon.

Bring the mixture to a boil and then add 100 g of plain oatmeal. Stir the pancake base until it thickens and has the consistency of porridge. Then scrape it into a bowl, cover with a lid and let it cool for 20 minutes.

Caramelized pears

In the meantime, you can prepare the caramelized pears. How to do it: Lightly heat the pan, sprinkle it with sugar and wait until the sweetener starts to dissolve slowly. Once the sugar softens and begins to turn golden, stir in 25g of coconut butter and 2 firmer pears that you have sliced ​​and coated in cinnamon. Cook the mixture until soft for about five minutes…

Preheating the oven

Back to the oatmeal! While you let it rest for a while, it swelled up a bit. Add 1 egg and ½ teaspoon of salt to it. After that, the pancake dough does not want to rest for a while and preheat the oven to 140 °C. Leave the trays in it to warm up a bit. And then comes the grand finale!

Frying and serving

Melt some coconut butter in a pan and fry the oat pancakes on it. Oatmeal is a slightly coarser material than classic wheat flour, so expect a thicker version of the pancakes. Perhaps it is better to choose fritters in this variant that do not tear and cook better. Serve the finished pancakes topped with a spoonful of coconut yogurt (if you don’t have any, you can use any other) and warm caramelized pears.
