Easy to make, melts in your mouth. Nicpoń cake, perfect for New Year's Eve

If you are looking for an idea for a delicious, easy-to-make cake that will taste great with coffee or tea, we have the right solution. Good-for-nothing cake Everyone will like it – family and friends. Seemingly simple, it has something about it that makes you reach for another piece and your guests will ask for the recipe.

Cake:

  • 250 g of wheat flour,
  • 1 teaspoon of baking powder,
  • 50 g of powdered sugar,
  • 100 g of butter,
  • 3 large yolks.

Difference:

  • 3 large egg whites
  • 70 g of powdered sugar,
  • 1 teaspoon of potato flour.

Additionally:

  • 400 g plum jam,
  • 60 g of almond flakes.

First prepare the dough. Sift the flour onto the pastry board, add baking powder, powdered sugar, add cold butter and egg yolks. Quickly knead the dough into a smooth dough, wrap it in cling film and put it in the fridge for 30 minutes. Roll out the cooled dough and place it in a rectangular tin (23×36) lined with baking paper.

Spread plum jam on the surface of the cake.

Whip the egg whites into a meringue, fix it with powdered sugar, and finally add the starch and mix gently with a spoon. Pour the foam onto the cake, spread it and sprinkle with almond flakes. Place the baking tray in the preheated oven 170°C for approx. 40 minutes. After baking, you can also sprinkle with e.g. chocolate pieces.

Good-for-nothing cake it’s ready. Just let it cool, remove from the tin and serve.
