New Year’s Eve dinner This recipe is a combination of elegance and simplicity – perfect for a lazy celebration on the first day of the year. Juicy chicken rolls in aromatic sauce bacon stuffed with creamy mozzarella and sun-dried tomatoes sure to bring everyone to the table. Served with potato purée and your favorite salad, they create a complete, elegant dish that requires a minimum of effort and guarantees maximum delight. Start the year in style – without spending unnecessary time in the kitchen.

To prepare this dish, you will need:

  • 500-600 g chicken breast (2 single breasts),
  • 16 slices of smoked bacon,
  • 1-2 tablespoons of chopped dried tomatoes from the marinade,
  • 100 g white mozzarella,
  • 200 ml of broth or water,
  • 2-3 tablespoons of liquid honey,
  • 1 tablespoon of olive oil or olive oil,
  • 1 teaspoon of sweet pepper,
  • a pinch (on the blade of a knife) of smoked paprika powder,
  • ½ teaspoon of dried hot pepper flakes,
  • ½ teaspoon of dried garlic,
  • ½ teaspoon of dried onion,
  • 1 teaspoon of dried Italian herbs,
  • salt and black pepper.

You can serve ready-made chicken breasts in several ways. They will taste great with potato purée, you can also serve them with fries or roasted potatoes. It’s worth trying to make it quick Italian-style salade.g. arugula, tomatoes, olives, mozzarella, and a dressing based on olive oil, lemon juice and chopped fresh basil.

In a small bowl, mix honey with olive oil and spices. Divide the chicken meat into 2 separate fillets, remove the membranes, wash, dry and cut horizontally to make two schnitzels. Lightly pound the meat and rub it heavily on both sides with half of the spice mixture. Cover the breasts with foil and place in the refrigerator for 30 minutes.

Meanwhile, drain the tomatoes from the liquid and chop them finely. Cut the mozzarella into slices and then into sticks. Place a portion of chopped tomatoes and cheese on each cutlet. To add more flavor, also add a few fresh basil leaves or a bit of pesto. Roll the meat tightly and wrap it with bacon slices. Place the rolls in an ovenproof dish with the bacon ends side down, rub with the remaining spice mixture and pour the broth over. Cover the vessel with a lid.

Put the dish in the oven preheated to 190°C and bake for 25-30 minutes. At the end of baking, remove the cover and set the oven to the upper roasting mode or turn on the grill function, thanks to which the bacon will brown nicely.

To make dinner ready for the New Year, add mashed potatoes and a portion of lettuce with cream sauce or steamed vegetables to the rolls.
