A proven one can be found in the e-book of the Swedish embassy. Even though we associate herring and Sweden primarily with surströmming and the not very pleasant smell that comes from a can of pickled fish, Swedes do not only eat herring in this form. Swedish-style fish in vinegar sauce smells very good and tastes even better. Michał Godyń describes how to prepare it in the basic version in a free e-book. The chef from the Swedish embassy gives many recipes for delicacies that can inspire us in preparing New Year’s Eve dishes.
The best herring for New Year’s Eve. A recipe that always works
Herrings have been present on the tables of the rich and the poor for centuries. In Poland, they were one of the basic Lent products that could not be missing on the Christmas Eve table. This is still the case today, which is why many people are looking for the perfect recipe for preparing fish. It’s worth getting inspired by the cuisine of other countries. After all, herring is a popular fish not only in Poland. Even Pope Alexander III himself allowed Scandinavian fishermen to work on Sunday if the herring shoals appeared on that day. Scandinavia is famous for good quality herrings and many ways of preparing them. However, it is worth knowing the basic recipe for the vinegar marinade, which is slightly sour and sweet, which makes the herring taste perfect. The addition of bay leaves, allspice, onion, carrot and sugar is the key to success. Later, you can subject the herring to other aromatic marinades, e.g. mustard and coffee or berries. However, if we do not like too sweet flavors, it is worth reducing the amount of sugar given in the recipe by half. The exact recipe can be found in the mentioned free e-book available on the website of the Embassy of Sweden in Poland (swedenabroad.se/pl/embassies/polska-warszawa/Aktualności/nyheter/kulinarny-e-book-ze-szwedzkimi-przepisami/#). There you will also find recipes for meatballs, saffron rolls and many other delicacies.
