Start by preparing the tangerines. They should be fresh, sweet and juicy. Peel them, divide them into pieces and, if necessary, remove the white blanks so that they are perfectly smooth. The basis of the cake is a simple mixture of cream, sugar and gelatin, which covers the tangerines and creates an irresistible consistency.
Take the whipping cream and heat it over a low flame along with the sugar. The mixture should be sweet enough to bring out the tangerine flavor, but not too sweet to keep it fresh. Once the sugar has dissolved, add the dissolved gelatin according to the directions. Allow the mixture to cool briefly so that it is not hot but still liquid.
Place the tangerines in a deep pan or round dish. Gradually pour the prepared cream mixture over them so that they are completely submerged. The tangerines should be spread evenly so that the cake looks and tastes perfect. Let the whole base harden overnight in the fridge.
