Diet chicken dinner. Eat to avoid gaining weight

A light diet dinner is a perfect combination of nutritional values ​​and taste. Juicy, baked chicken pieces, crispy lettuce leaves, sweet corn and juicy tomatoes create an appetizing composition full of freshness. It is complemented by hard-boiled eggs and an emulsion sauce based on honey and mustard. Without heavy carbohydrates, but with a solid portion of protein and healthy fats – this dish will work well as a light meal during the day or as a nutritious dinner.

Ingredients:

  • 2 chicken breasts (approx. 600 g),
  • 100 g of wheat flour,
  • 300 g tomatoes, e.g. plum or cocktail tomatoes,
  • 2-3 eggs,
  • approx. 200 g of canned corn,
  • lettuce leaves and chives for serving,
  • salt and black pepper.

Sos:

  • 2-3 tablespoons of olive oil,
  • a spoon of honey,
  • a teaspoon of mustard,
  • 1/2 teaspoon finely grated ginger,
  • a teaspoon of lemon juice,
  • garlic clove,
  • salt and black pepper.

How to do it:

Wash the chicken breasts, dry them and cut them in half horizontally. Place a sheet of foil on each portion and flatten slightly using a rolling pin. Rub the meat with salt and pepper, then cut it into smaller pieces (just like for nuggets) and coat it in wheat flour. Place the chicken pieces on a baking tray lined with baking paper and put in the oven preheated to 180°C for about 20 minutes. Halfway through baking, you can carefully turn the poultry morsels over (using tongs).

Meanwhile, hard-boil the eggs (approx. 7 minutes), cool, peel and cut into eighths. Cut the tomatoes into halves or eighths and drain the corn. Chop the chives finely.

In a small bowl, vigorously mix the olive oil, honey, mustard and lemon juice until an emulsified sauce is created. Add finely grated ginger and pressed garlic, season with salt and black pepper and mix.

To serve a dietary dinner, place lettuce leaves on the bottom of plates, top them with baked chicken pieces, corn, tomatoes and pour the prepared sauce over them. Top with hard-boiled eggs and sprinkle with chopped chives. Serve immediately after preparation.
