A winter snack for borscht and more. Delicious yeast patties with a distinctive filling

During house parties and family gatherings, in addition to the main course, it is worth preparing a snack or appetizer. You can treat your guests in winter hot dish. A bold, red borscht that you can serve with will work great Brewers’ yeast patties with a distinctive stuffing of sauerkraut, onion, pepper, ground cumin and coriander. They are so good that they disappear from plates in the blink of an eye.

Cake:

  • 150 g of wheat flour,
  • ½ teaspoon of instant yeast,
  • 1 pinch of salt,
  • 80 ml of warm milk,
  • 30 g melted butter.

Stuffing:

  • 200 g sauerkraut,
  • 1 onion,
  • 1 teaspoon of salt,
  • ½ teaspoon of pepper,
  • 1 teaspoon of ground cumin,
  • 1 teaspoon of ground coriander,
  • 1 teaspoon olive oil.

Additionally:

  • flour for sprinkling,
  • egg for brushing,
  • sesame seeds for sprinkling.

Prepare the dough. Mix flour, yeast, salt and milk in a bowl. Knead for 5 minutes until you obtain a smooth and elastic dough. Set aside for 20 minutes, covered, in a warm place. Roll out the dough into a thin cake. Brush it with melted butter and then roll it into a roll. Cut the roll into pieces approximately 1 cm long. Crush each piece of dough in your hand. Sprinkle with flour and roll them into circles with a diameter of approx. 7-8 cm.

Prepare the filling. Peel the onion and chop finely. Fry it in a pot with a little olive oil until translucent. Pour water over the cabbage, chop it finely and put it in the pot with the onion. Pour a little water and add all the spices. Cook the whole thing for about 15 minutes, until soft. Drain the cabbage in a strainer and leave to cool.

Assemble the patties. Place a spoonful of filling on each circle cut from the dough. Beat the egg for brushing. Brush the edges of the disc with it. Fold the edges inwards to form a triangle. Leave holes at the corners of the triangle so that the water can evaporate freely. Place the finished triangles on a baking tray lined with paper. Brush them with the remaining egg on top. Sprinkle them with sesame seeds. Put the tray in the oven set to 190 degrees Celsius and bake the patties for about 15 minutes or until nicely browned. Serve the brewers’ patties warm or after cooling.
