Almond sponge cake and delicate vanilla cream. Make a Good Fairy cake for the weekend

You don’t need magic spells to create magical ones cake based on almond sponge cakes and delicate vanilla cream. Good Fairy is a combination of flavors that will delight even the most demanding gourmets. It is a perfect dessert for special occasions, as well as for meeting a friend over coffee.

Before you start baking the cake, be sure to prepare the appropriate form. A rectangular baking tray measuring 25×30 cm will work best.

Sponge cake:

  • 500 g cake flour,
  • 5 tablespoons of fine sugar,
  • 150 ml of milk,
  • 120 ml of oil,
  • 4 eggs,
  • 150 g ground almonds,
  • additionally – 100 g of chopped almonds for sprinkling.

Cream:

  • 1 package of vanilla pudding,
  • 500 ml of milk,
  • 2 tablespoons of sugar,
  • 150 ml whipping cream,
  • a few drops of vanilla extract.

Additionally:

Start by making the dough. In a bowl, beat the eggs and sugar until smooth and light. Then add milk, oil, sifted wheat flour and ground almonds and mix everything with a spoon. Put the dough into a form (25×30cm) lined with baking paper and put in the oven preheated to 180°C for 25-30 minutes. Once baked, leave to cool completely.

Heat 400 ml of milk with sugar in a pot until boiling. Mix 100 ml of milk with the pudding powder in a bowl, then pour the mixture into the hot milk and cook the pudding. Set aside to cool completely. In a bowl, beat the cold cream until stiff and add a few drops of vanilla oil. Gradually add the whipped cream to the cooled pudding and mix until smooth. If the mixture is not sweet enough, add a little powdered sugar.

Cut the sponge cake in half. Spread 2/3 of the mixture over the lower part of the cake and cover with the second sponge cake. Spread the remaining vanilla mixture on top of the cake and sprinkle with chopped almonds. To enhance the flavor, you can first toast the almonds in a dry pan. Place the cake in the fridge for an hour and serve chilled.
