Egg muffins with spinach and feta cheese they are quick and easy to prepare, and at the same time they contain a lot of protein and are low in calories. They will be perfect for a nutritious breakfast, but also as an appetizer or snack. Pack them in your lunchbox whenever you run out of ideas on how to diversify the most important meal of the day. You can easily spice up the muffins with additional ingredients you have in the fridge. There are almost no limits to flavor variations, so you can adjust the dish to the taste buds of all household members.

To prepare the dish, you will need:

  • 12 eggs,
  • 50 g fresh spinach,
  • 100 g mushrooms,
  • 100 g sera feta,
  • ¼ teaspoon of salt,
  • 1/8 teaspoon black pepper.

Additionally:

  • butter for spreading.

The base of the dish are, of course, eggs, but you can modify the remaining ingredients as you wish. It will fit perfectly here too finely chopped peppers, onions, dried tomatoes, olives, chives, ham, or grated cheese. It’s worth experimenting and preparing these delicious snacks.

Clean the mushrooms and cut into thin slices. Fry them in a little butter until nicely golden and excess water has evaporated. Chop the spinach coarsely. Break the eggs in a large bowl and beat them with a whisk until fluffy. Season them with salt and pepper, then add the mushrooms and spinach. Stir gently until combined.

Grease the muffin tins with butter. Fill them halfway with the egg mixture. Sprinkle everything with crumbled feta cheese. Place the egg muffins in an oven preheated to 175 degrees Celsius and bake for 18-20 minutes, until the inside is completely set.

Serve the whole thing warm immediately after baking. If necessary, store in an airtight container in the refrigerator. Use within 5 days, reheating cupcakes in the oven if necessary.
