Simple, traditional, perfect for a family dinner. Pork rolls from a proven recipe

To make this recipe you need:

  • 10 slices of pork shoulder or pork loin,
  • 1 white onion,
  • 4-5 pickled cucumbers,
  • 2-3 tablespoons of mustard,
  • 2-3 teaspoons of dried marjoram,
  • 2-3 tablespoons of wheat flour,
  • salt and black pepper,
  • allspice, bay leaves and 2 cloves of garlic,
  • oil.

Wash the meat slices, dry them on a paper towel, and rub them with salt, black pepper and marjoram. Wrap with cling film and set aside in the fridge for 30 minutes.

After this time, remove the pork and set aside for 15 minutes to come to room temperature. Spread mustard on each slice of meat, arrange pickled cucumbers and onion slices along the edge. Tightly wrap the shoulder into rolls, placing the end down. Coat the rolls in flour (shake off the excess) and fry in hot oil or lard. Then put them into the pot.

Pour water into the pot to cover the rolls, add 2 bay leaves, chopped garlic and 4-5 allspice balls. Season with salt, black pepper and marjoram. Keep the rolls on medium heat for about 60 minutes so that the meat softens and becomes tender.

Finally, take a little of the hot stock, mix it with flour in a bowl and pour it into the pot to thicken the sauce. Serve the pork roulades immediately after preparation with Silesian dumplings, boiled potatoes and warm beetroots or fried sauerkraut.
