Many people like highly sour cucumber soup. However, we are often unable to eat much of it. Do you want to prepare a more delicate version of cucumber soup? Then add two unusual ingredients to make a filling dinner. It won’t end with just one plate.

Cucumbers that we pickled in spring and summer are a good base for . We can even use pickled ones (slippers), which will make the dish more expressive. What about extras?

Cucumber soup is most often served with additions such as potatoes, white rice or pasta. Few people have heard that you can eat it with… semolina and eggs. Why is it worth adding these two ingredients to this dish?

Semolina is added to broth in Małopolska. Nothing stops you from adding two tablespoons of this product to cucumber soup. Thanks to it, it will be thicker and more substantial.

In turn, a hard-boiled egg is usually added to sorrel soup or żurek soup. In this case too will have a positive effect on the taste cucumber.

Ingredients:

  • 6 pickled cucumbers;
  • 100 ml of pickled cucumber water;
  • 1 liter of vegetable broth;
  • 150 ml of cream 18%;
  • 2 tablespoons of butter;
  • 2 tablespoons of instant semolina;
  • 3 hard-boiled eggs;
  • spices: salt, pepper.

Preparation:

First, grate the cucumbers using small or medium-sized pieces. Then fry them in butter for about 10 minutes to soften them and release the water.

In the next step pour off a few tablespoons of cold broth and add semolina. Mix everything to get rid of lumps.

Pour the cold broth with semolina into the rest of the boiled broth and cook everything for 5 minutes. After this time, add the fried cucumbers and continue cooking for another 10 minutes.

Then Pour a few tablespoons of the broth into a cup and add the creamstirring constantly. After a while, pour it into the cucumber soup.

Finally, add the juice from the pickled cucumbers and season the soup with salt and pepper as desired. Serve it with hard-boiled eggs. It is worth cutting them into quarters. We can decorate the whole thing with dill.
