Cranberry slices are an inconspicuous cake that attracts attention with its appearance. She’s appetizing a mixture of sweetness, acidity and crunchy texturethat make every bite a pure pleasure. Buttery-nutty base filled with juicy cranberries delights with the combination of flavors. It completes the whole thing golden crumble. Such a dessert is a perfect proposition both as an elegant treat for guests during a carnival party and as a sweet for ordinary winter afternoons with tea.
Ingredients:
- 200 g of soft butter,
- 200 g of white sugar,
- 100 g of cane sugar,
- approx. 220 g instant oat flakes,
- 1/2 teaspoon of baking soda,
- 1/2 teaspoon of salt,
- 200 g of peanut butter (without sugar),
- a large handful of chopped peanuts without salt,
- 300 g fresh or frozen cranberries,
- approx. 100 ml of honey or maple syrup,
- approx. 200 ml of water,
- optionally, a teaspoon of vanilla extract.
How to do it:
Preheat the oven to 180°C. Grease a large baking tray (40x40cm) with butter and sprinkle with flour or line it with baking paper. You can use two, smaller baking trays (20×20).
Start preparing the base and crumble. Mix the soft butter with the sugars until a fluffy mass is obtained and the sugar dissolves. In a bowl, mix sifted flour, oatmeal, baking soda and salt. Gradually add the flour mixture to the softened butter and mix until coarse crumbs form. Finally, add peanut butter and chopped nuts and mix. Set aside about 1/3 of the mixture for the top, and place the rest on the bottom of the prepared baking tray and press it down with an open hand. Place the baking tray in the oven for about 15 minutes to allow the mixture to harden. Then set aside to cool.
Put the washed cranberries into the pot, add water and add maple syrup or honey. The amount of honey depends on the sourness level of the cranberries. Cook over medium heat, stirring occasionally, until the fruit releases juice and thickens. Cook for about 15 minutes, then remove from heat and add vanilla extract. If the fruit is falling apart too much, add a teaspoon of corn flour and mix vigorously. Spread the cranberry mousse on the baked cake and spread evenly. Sprinkle the remaining nut mixture on top and put back in the oven for 15-20 minutes, until lightly browned.
Set the baked cranberry slices aside to cool completelythen cut out even squares and serve.
