Are you planning a social event where you want to serve something different than usual? We have a recipe for you that will surely be remembered for a long time. Here a snack that will surprise your guests – an aromatic combination of meatballs wrapped in eggplant slices in a unique tomato sauce. This dish simply melts in your mouth.

To make this recipe you need:

Meatballs

  • 2 eggplants,
  • 300 g of minced beef,
  • 300 g of minced pork,
  • ½ onion,
  • 100 g stale bread,
  • 1 egg,
  • 1 clove of garlic,
  • 1 teaspoon of ground cumin,
  • 1 teaspoon of oregano,
  • ½ teaspoon of salt,
  • ½ teaspoon of black pepper,
  • 1 tablespoon of chopped parsley.

Sos

  • 1 can of chopped tomatoes 400 g,
  • 1 teaspoon of tomato paste,
  • 50 ml of water,
  • 1 teaspoon of granulated garlic,
  • 1 tablespoon of olive oil,
  • 1 teaspoon of sugar,
  • 1 teaspoon of oregano,
  • ½ teaspoon of chili flakes,
  • 1 teaspoon of salt.

First prepare the meatballs.

Remove the stems from the eggplants and cut them into thin strips. Brush them on both sides with olive oil and sprinkle with salt.

Place the eggplant on a baking tray lined with baking paper and bake at 200 degrees Celsius until soft, about 15 minutes.

Place the bread in a bowl and pour water over it. Set aside for 15 minutes, then squeeze and place in a bowl. Add both types of minced meat, finely chopped onion, parsley, egg and spices.

Mix the mass well with your hands for a few minutes. Form balls with a diameter of approx. 5-6 cm, depending on the width of the eggplant slices.

Take one slice of eggplant and place the meat ball on it. Roll the whole thing into a roll and place it in an ovenproof dish, seam side down. Repeat until ingredients are finished.

Then prepare the sauce.

Place all ingredients in a pot and mix well.

Heat the mixture for a few minutes until the vegetables start to fall apart.

Pour the prepared sauce over the eggplant meat balls.

Place the dish in the oven set to 190 degrees Celsius and bake for about 50 minutes, until the top of the eggplants is deeply browned and even slightly charred.

Remove and leave to cool for about 20 minutes.

Serve the snack warm, with tomato sauce, to surprise your guests.
