A smart housewife’s dinner is a masterful dish that makes an impression, and does not require spending the whole day in the kitchen. Chicken pockets filled with cheese, ham and sun-dried tomatoes it’s a smart way to get lots of flavor, without unnecessary complications. Aromatic marinade based on herbs and garlic it adds character to the chicken, and the baked cheese crust finishes the creation with golden crispiness. The dish is perfect for those who need an exquisite but easy to prepare dish. After all, smart housewives know how to combine taste and comfort.
Ingredients:
- 5-6 individual chicken breasts,
- 1.5 teaspoons of chopped garlic,
- a spoonful of lemon juice,
- 2 tablespoons of chopped thyme,
- a teaspoon of dried Provençal herbs,
- 2-3 tablespoons of olive oil,
- a teaspoon of ground sweet pepper,
- a teaspoon of salt,
- a pinch of black pepper,
- 200 g of yellow cheese,
- 2-3 tablespoons of chopped dried tomatoes,
- 5-6 slices of ham,
- parsley.
How to do it:
Prepare the marinade. In a bowl, mix olive oil, lemon juice, chopped or pressed garlic, thyme, herbes de Provence, sweet pepper, salt and black pepper. Wash the chicken breasts, remove the membranes and cut horizontally to create pockets. Be careful not to cut them completely. Rub the resulting herbal marinade over the chicken (outside and inside the pocket). Place on a plate, cover with cling film and put in the fridge for 2 hours or overnight.
Remove the marinated chicken breasts from the refrigerator. Cut half of the cheese into thin slices or grate it on a large grater. Finely chop the dried tomatoes. Fill the chicken pockets with a slice of ham, cheese and sun-dried tomatoes. Sprinkle with chopped parsleyfold the pockets and place them in a baking dish. Pour approximately 100 ml of water and cover the vessel with a lid or aluminum foil.
Put the dish with the dish in the oven preheated to 180°C for approx. 30 minutesthen remove the cover, sprinkle the chicken breasts with the remaining grated cheese and return to the oven for 7-10 minutes (top baking) so that the cheese browns nicely.
