Raisin marigolds: The original First Republic recipe from the classic Czech cookbook of the famous Sandtnerová

Marie Janků-Sandtnerová, originally a teacher at the Girls’ High School in Prague, belonged to the culinary elite at the beginning of the last century. After the First World War, the Prague Municipality entrusted her with the management of the so-called soup kitchens for war invalids and the poor. She wrote a long series of cookbooks, we bring you a recipe for one of her delicacies – raisin marigolds.

First we prepare the dough

The basis is flour, cooks know that well. Take half a kilo of the smooth one, grind it and add the lemon zest of one lemon. It is better to use a small grater, but if you don’t have one in your kitchen utensils, you can certainly manage with a large one.

Mix in 140 grams of finely ground, peeled almonds and the same amount of sifted powdered sugar. Add a pinch of cinnamon, ground cloves and you mustn’t miss the raisins that have just been praised, weigh about 70 grams of them and finely chop them into a paste.

You can use the chopper of a hand blender if you don’t want to cut small raisins, this helper will save a lot of time. Finally, combine the yolks of 2 eggs and you can incorporate the dough.

How to roll out the dough correctly

Now all you have to do is roll out the dough on the pancake and it will be almost done. Don’t forget to flour the roll or simply the surface on which you will spread the dough. Try to hit the dough thickness of about 25 millimeters, but a millimeter or two here and there is of course okay.

Place the half-moons cut with a mold on a baking sheet lined with baking paper in a preheated oven at 170 degrees Celsius and bake until the cut-out half-moons take on a pinkish color.

Let’s get to the frosting

Use the time in between to prepare the frosting. Take 120 grams of powdered sugar, add 1 teaspoon of hot water and lemon juice from 1 lemon, the one from which you cut the peel into the dough. When the famous half-moons have taken on the right light pink color, take them out of the oven, leave them on a baking sheet and brush them with lemon glaze while they are still warm. And it is. Speaking of this old Czech yummy, don’t hesitate to prepare it in larger quantities, because it will last a long time.

And finally, a bit of education. You knew that they are correct according to written Czech raisins i raisins? Word raisins is of German origin raisins, and that again from Latin let’s gather i.e. grapes. But it rather reminded people of an expression grapes and therefore the word raisins transformed into raisins.
