Bread is a product that has a short shelf life due to its composition and structure. Aging processes begin almost immediately after baking the bread, so it loses its flavor and structure after just a few days.

Why does bread spoil quickly?

Bread consists of water, starch, proteins and fats. During baking, the water evaporates from the dough and the starch undergoes a gelatinization process, creating a flexible and soft internal structure. After baking, the opposite process begins – starch retrogradation. In this process, the starch returns to its crystalline form, so the bread loses its elasticity and hardens. Improper storage of bread can cause it to lose its freshness more quickly. It should be mentioned that an extremely dry environment accelerates the blackening process, as the bread transfers water to its surroundings, making its structure stiffer and more brittle.

Mold thrives in warm and humid environments. Bread stored in excessively humid conditions without air circulation becomes an ideal place for its growth. If you store it in plastic bags, especially in warm rooms, it quickly absorbs moisture from the environment.

Place the sugar cubes in the bread pan

One of the easiest and most effective ways to prolong the freshness of bread is to place two sugar cubes in the bread box. How does this mechanism work and why should it be used? Sugar is hygroscopic, which means it has the ability to absorb moisture from its surroundings. When there is excess moisture in the air around the bread, the sugar begins to absorb it.

Sugar absorbs moisture, reduces the risk of mold and helps keep bread in better condition for longer. To use this method, simply place two sugar cubes in the oven next to the bread. They should not touch the bread directly, as they may dissolve due to contact with the moisture in the bread. You can place them in a small bowl or on a piece of paper to keep them stable and hygienic. Check the sugar cubes regularly and if you find that they have become wet or started to crumble, replace them with new ones. This is a sign that they have already absorbed a lot of moisture and may be losing their effectiveness.

Linen bags are an excellent choice for storing bread. It is a natural material that allows free air flow. It prevents the accumulation of moisture and at the same time slows down the drying process of the bread. Unlike plastic packaging, canvas prevents the formation of mold and helps keep the bread soft for longer. For even better results, you can add apple peel to the bag, which naturally regulates moisture.

Do not store bread in plastic bags

Storing bread in plastic bags is the fastest way to spoil it. Plastic is impermeable to air and traps moisture, which encourages mold growth. If you don’t have a canvas bag, it’s worth reaching for breakfast paper or a cotton towel. The paper allows air to circulate and at the same time protects the bread from drying out.

Refrigerator or freezer – where to store bread?

Bread should not be stored in the refrigerator, as low temperatures accelerate the blackening process. This is due to the reverse gradation of starch, which takes place more quickly in cold conditions, leading to a loss of softness and flavor of the bread. The exception is the situation when the temperature in the kitchen exceeds 25 °C, in which case mold can develop more quickly. Therefore, you should store the bread in the refrigerator, but first wrap it in paper or put it in a canvas bag to limit the direct exposure to cold air and prevent it from drying out too much.

If you don’t plan to use up all the bread within a few days, freezing it is the best option. The freezer stops spoilage processes and after defrosting the bread tastes almost the same as the day you bought it. To preserve the quality of the bread, before freezing it should be carefully wrapped in cling film or placed in special freezer bags to prevent frost burn. Defrosting should take place gradually, preferably on the kitchen counter at room temperature. Avoid defrosting in the refrigeratorbecause it can lead to faster blackening of the bread.
