Unique donuts from Zamość. No one can predict what they hide inside

Zamość donuts are a combination of traditional, delicate yeast dough with a savory filling. Although the stuffing may seem surprising at first, it was prepared from products typical of the region. These are cottage cheese, potatoes and onion. It also goes inside the donuts spinachwhich enhances the taste and adds nutritional value. Zamość donuts will be a great and “convenient” snack for a party (e.g. carnival) – you can eat them without using cutlery or a plate. If there are people among your guests who don’t like sweets, offer them these unique donuts.

Ingredients:

Cake:

  • 20 g of fresh yeast,
  • 30 g of powdered sugar,
  • 230 ml of lukewarm milk,
  • 450 g of wheat flour,
  • 1/2 teaspoon of salt,
  • a teaspoon of vanilla extract,
  • egg,
  • 4 yolks,
  • 50 g butter.

Filling:

  • 450 g frozen spinach,
  • 250 g potatoes,
  • onion,
  • garlic clove,
  • 100 g of fatty cottage cheese,
  • a spoon of olive oil,
  • 1/8 teaspoon nutmeg,
  • 1/2 teaspoon of salt,
  • 1/2 teaspoon of black pepper.

Additionally:

  • oil for deep frying.

How to do it:

First, prepare the dough. Grind the yeast in 3 tablespoons of milk and a teaspoon of sugar. Set aside for 15 minutes. Pour flour, salt, vanilla extract and the rest of sugar into a bowl. Add the egg, yolks and soft butter. Make the dough, adding the yeast mixture and the rest of the milk as you go. Place the dough in a lightly oiled bowl and cover with plastic wrap. Set aside for an hour to rise. Roll out the dough to a thickness of about a centimeter and cut out circles with a glass. Transfer them to a baking tray lined with baking paper, 3-4 cm apart. Leave to rise for 30 minutes.

In the meantime start making the filling. Peel the potatoes and boil them in salted water until soft. Drain, cool and chop finely. Peel the onion and chop finely. Fry it in a tablespoon of olive oil until translucent. Defrost the spinach and, if necessary, chop it into smaller pieces. Place it in a pan and fry until the liquid evaporates completely. Set aside to cool completely. Transfer the spinach and onion to a bowl. Add potatoes, cheese and all spices. Mix well.

Prepare Zamość donuts. Flatten each disc with your hands, degassing the dough. Put 1-2 tablespoons of filling on each of them. Glue them together and form oblong donuts. Heat about 5-6 cm of oil in a large pot. Fry the donuts for about 3-5 minutes on each side, until nicely browned. Remove them with a slotted spoon and place them on paper towels. Serve Zamość donuts warm, immediately after preparation.
