The French, like Poles, love potatoes. They also have their own recipe for a dish that is something between Polish potato pancakes and a Spanish tortilla, i.e. darphin potato. To prepare French-style potato pancakes you need:
- ½ teaspoon of nutmeg,
- 1 tablespoon of butter,
- 30 g of dried porcini mushrooms,
- 600 g potatoes,
- frying oil,
- salt, pepper.
As in the case of the classic Polish version, it is best to bet on floury potatoes. You can replace dried boletes with boletes, but boletes work best.

Place the dried mushrooms in a bowl, pour warm water and set aside for 2 hours. After this time, drain the mushrooms (leave the water for preparing the sauce), heat the oil in a pan and fry them for about 4-5 minutes. Set aside to cool. Wash the potatoes, dry them, peel them and grate them on a medium grater. Squeeze out excess water – place the grated potatoes in a clean cotton cloth and squeeze. Season the potatoes with nutmeg, salt and pepper. Chop the cooled mushrooms and add them to the grated potatoes with spices. Mix the mass thoroughly.

Preheat the oven to 170 degrees Celsius. Line a baking tray with baking paper. Heat the oil in a pan with a tablespoon of butter. Add a portion of potatoes, spread gently over the pan and fry on both sides until golden brown. Place the French-style potato pancake on a baking tray and place in the preheated oven for 4-5 minutes. Serve with mushroom sauce prepared with the water after soaking the mushrooms or with your favorite vegetables – carrots, celery, spinach, broccoli, peas, and even bok choy. Enjoy your meal!
