There’s still a month and a half left until Fat Thursday. In 2025, it falls exceptionally late, on February 27 to be precise. However, that doesn’t mean you can’t enjoy delicious donuts beforehand. The current one is the perfect opportunity to do so.

You don’t have to worry about gaining weight if you eat too many of them. You can prepare them in a slightly less fat and caloric version. Enough is enough including instead of frying them in fat, you will decide to prepare baked donuts according to the recipe recommended to me by my friend.

Baked donuts are usually healthier and less fattening than deep-fried ones. In this version additionally instead of sugar, erythritol is added, and wheat flour is replaced with coconut flour.

Thanks to this, they have even fewer calories and carbohydrates, as well as a lower glycemic index. So you can eat them without remorse, even if you are trying to lose unnecessary kilograms (of course, while maintaining common sense and calorie balance).

Recipe for baked donuts:

  • coconut flour – 50 g
  • baking powder – 1 tsp
  • baking soda – 0.5 tsp
  • erythritol – 3/4 teaspoon
  • eggs – 4 pieces
  • milk – 150 ml
  • butter – 30 g
  • dark chocolate
  • nuts
  • coconut flakes
  • salt – a pinch to taste

Start preparing baked donuts by taking out a large bowl for dry ingredients from the cupboard. Add coconut flour, erythritol, baking powder, baking soda and a pinch of salt.and then mix everything thoroughly.

Add eggs, milk and previously melted butter. Mix everything together to create a smooth mass. Grease the selected form (e.g. for muffins/donuts, depending on your preferences), pour the dough onto the form and put the donuts in the oven preheated to 180 degrees Celsius for 15 minutes.

When the donuts are golden brown, remove them from the oven and wait until they cool down. Cover them with melted chocolate, sprinkle with nuts and coconut flakes (or other selected ingredients – you can use icing and powdered sugar as in the main photo, if you prefer). Once the chocolate hardens, you can serve the snacks to your guests.
