To prepare baked beans you will need:
- 1 large onion,
- 1 teaspoon of pepper,
- 1 teaspoon of sweet smoked paprika,
- 1 tablespoon of marjoram,
- 1500 g tomatoes,
- 2 flat teaspoons of salt,
- 2-3 bay leaves,
- 3 tablespoons of tomato paste,
- 3 grains of allspice,
- 300 g raw smoked bacon,
- 400 g of slightly dried sausage,
- 5 cloves of garlic,
- 500 g of dry beans “Piękny Jaś”.
In season you can use fresh tomatoesand can be successfully used in winter canned tomatoes.

The day before, in the evening, pour water over the beans (approx. 10 cm above the pods) and set aside to swell overnight (approximately 10 hours). In the morning, rinse the beans, pour a liter of water, add bay leaves and allspice. Cook until soft for about 1.5 hours. At the end of cooking, add a teaspoon of salt. Cut the bacon and sausage into smaller piecesthrow it into a cold pan and fry. Chop the onion, cut the garlic into thin slices and add to the pan, fry for 10 minutes. Add the contents of the pan to the pot with cooked beans (along with water) or pour the beans into a large pan (if you have one).

Cook the beans with sausage and bacon for about 10 minutes. Meanwhile, chop the tomatoes (if using fresh ones). Add the tomatoes to the potadd tomato paste, sweet smoked paprika, marjoram, a teaspoon of salt and pepper. If you like, you can add savory or cayenne pepper. In the latter case, the dish will be spicier. Cook the baked beans for another 15 minutes, uncovered. Ready! It is best to serve it with fresh breadbut you can also with pasta the rice. You can also sprinkle with fresh herbs, e.g. basil or lovage.
