So called one-pot dishes they are usually quick and extremely practical to prepare – they do not require the use of many dishes and a four-burner stove. However, not everyone likes to eat vegetables and meat combined. Can this be avoided by using little energy and the proverbial one pot to prepare dinner? Of course. Oven dinner this is a great example.
To prepare this recipe, you will need:
- 6 chicken drumsticks (sticks),
- 3 tablespoons of rapeseed oil,
- 1 tablespoon of mustard (e.g. Dijon),
- 2 teaspoons of sweet pepper (ground),
- 1 teaspoon of curry (powder),
- 1 teaspoon of oregano (dried, ground in a mortar),
- 600 g potatoes,
- 2 zucchinis,
- 3-4 cloves of garlic,
- 6 tablespoons of clarified butter,
- 2 teaspoons of potato seasoning,
- salt, pepper (to taste).
In this recipe, you can easily sneak in other ingredients that you have lying around in the fridge. It will fit perfectly here, for example carrots, red, green or yellow peppers, onions, sweet potatoes or mushrooms. It all depends on your tastes and preferences.
Prepare the chicken marinade – mix oil, mustard, pepper, curry and oregano in a bowl. Add some salt and pepper – as desired. Rinse the chicken drumsticks and dry with a paper towel. Rub thoroughly with marinade and set aside for 2-3 hours.
Melt the clarified butter in a pot. Add pressed garlic to it. Peel the potatoes and zucchini. Cut the vegetables into slices. Dry them with a paper towel. Sprinkle the potatoes with potato seasoning. Sprinkle the zucchini with salt. Arrange the vegetable slices in rows on the bottom of a lightly greased ovenproof dish. Pour melted butter and garlic over them. Next to (or if you have a small dish – on top of the vegetables) place the marinated chicken drumsticks.
Place the ovenproof dish in the oven preheated to 190°C. Bake for about 40-50 minutes. Halfway through baking, turn the drumsticks over to the other side. If they start to brown too much, cover the dish with a piece of aluminum foil.
