Drowned schnitzel is a dish that has gained popularity not only for its simplicity, but also for its ability to save meat that would otherwise end up in the trash.

Start by preparing the meat. Pound each cutlet thoroughly so that it is evenly thin and tender. Then salt them on both sides and get ready for an unconventional way of wrapping. For drowned cuttings, the procedure is reversed. First, coat the meat in breadcrumbs, then dip it in beaten egg, and finally coat it in plain flour. This special coating method ensures that a crispy and tasty crust is formed.
Fry the wrapped cutlets in hot oil until golden. Frying should be quick and intense, so that the surface is covered and the cutlets remain juicy inside. Once they are ready, transfer them straight to the baking tray. This is where the magic begins that makes this dish something special.
Pour the broth over the steaks in the roasting pan. The broth gives the meat moisture, flavor and ensures that even tougher meat turns into a soft bite. Place a slice of English bacon and a pat of butter on each cutlet. The bacon adds a slightly smoky touch, while the butter ensures the perfect juiciness.
Place the baking tray in the oven preheated to 180 °C and let the cutlets bake for about 30 to 40 minutes. During this time, the meat will stretch the broth and become perfectly tender.
