“You have a certain awe of the stars,” says Johannes Nuding. The 38-year-old Tyrolean is head chef in his own restaurant in the tranquil town of Hall in Tirol Black Eagle. Things are quiet in the town, at least quieter than in Nuding’s previous job in London. In this town of 15,000 people, you might not expect a three-star chef to be behind the stove. Nuding cooked for legends like Joël Robuchon and Pierre Gagnaire and was head chef at the luxury restaurant Sketch in London for years. There he won three stars in 2019, one of the highest honors in gastronomy, which he was the first native Austrian to be awarded after the chef of the century Eckhart Witzigmann.
