An exquisite option for dinner. Prepare Count Moniuszko's cutlets

Count Moniuszko’s cutlets is an exquisite dish characterized by a combination of pork, beef and poultry with the addition of dried forest mushrooms. The name of this dish refers to ancient times, when aristocratic cuisine often used several types of unique meats, such as guinea fowl, pheasant, roe deer or hare, to obtain an extremely rich and complex taste.

These elegant cutlets are the perfect choice for formal dinners, reminding us of our culinary heritage and tradition. Make this recipe and you will definitely come back to it.

Here is the list of ingredients needed to make this dish:

  • 200 g of ground, lean beef,
  • 200 g minced pork,
  • 200 g of minced chicken or turkey,
  • 1 white onion,
  • 1-2 cloves of garlic,
  • 1 stale kaiser roll,
  • 100 ml of fat milk,
  • ½ teaspoon of ground cumin,
  • ½ teaspoon of dried forest mushrooms ground into powder,
  • ½ teaspoon of herbal pepper,
  • 1 teaspoon of dried thyme,
  • salt and black pepper to taste,
  • 3-4 tablespoons of breadcrumbs,
  • 1 tablespoon of ground walnuts,
  • oil and clarified butter for frying.

Heat a tablespoon of oil in a pan and fry the peeled and finely chopped onion until it becomes shiny. After a while, add the pressed garlic and ground cumin. Fry for another minute until the mixture starts to smell nice. Set aside. Soak the kaiser roll in milk and leave it. Place all three types of meat in a large bowl, add fried onion with garlic and squeezed milk. Season with salt, black and herbal pepper and thyme. To enhance the flavor, grind the dried mushrooms in a coffee grinder and add about ½ teaspoon of powder. Mix the mass with your hand so that the mass becomes compact and comes away from your hands. If necessary, add 1-2 tablespoons of water.

In a bowl or deep plate, mix the breadcrumbs and ground walnuts. Take portions of the meat with a spoon, flatten it and coat it in the wheat-nut mixture. Heat 2-3 tablespoons of oil in a large frying pan and add a tablespoon of clarified butter. To make the cutlets taste even more special, you can use goose lard. Fry the cutlets on both sides until golden brown and place in the pot so that they do not lose heat.

Count Moniuszko’s cutlets serve with mashed potatoes and warm beetroots or other favorite additions.
