Potatoes have the wonderful property that they go well with many additions – they are perfectly complemented, for example, by boiled sausage. If you like this combination, you will definitely like this recipe – Poor Man’s Pancakes You can serve it as a stand-alone dish and pour it with ketchup, sour cream or garlic sauce, or prepare it as part of a dinner dish and serve it with Hungarian or mushroom sauce. Any salad also goes well with them.
To prepare this recipe you need the following ingredients:
- 750 g peeled potatoes,
- 250 g of cooked sausage, e.g. Doctor’s sausage (or smoked sausage),
- 1 white onion,
- 1-2 cloves of garlic,
- a pinch of soda,
- 1 egg,
- 2-3 tablespoons of wheat flour,
- salt and pepper to taste,
- oil for frying.
Peel the potatoes and grate them on a vegetable grater. Grate half of the potatoes on small holes and the other half on large holes. The pancakes will have a more interesting structure. Grate the peeled onion and garlic cloves on the small holes of a grater, mix with the potatoes and squeeze out the juice. Add the egg, finely chopped or grated sausage, salt, soda and pepper to the mixture. First add a smaller amount and, if necessary, a larger amount of flour and mix the mixture thoroughly. The dough for the pancakes should be compact and not fall apart during frying.
Heat the oil in a pan, take portions of the dough with a spoon, place them on the pan, form pancakes, flatten slightly and fry on both sides until golden brown. Then place on a plate lined with a paper towel to drain excess fat. Serve immediately hot with your favorite additions.
