In the Polish People’s Republic mortadella she often ended up on sandwiches. This cold meat was made from a ground mixture of meat and a large amount of fat, so it was not entirely clear what ingredients were in it. They were also popular breaded mortadella cutletswhich for some were a delicacy, others remember them as a “culinary nightmare”. Currently dishes with Italian mortadella are considered a real specialty. If you see it in a store, you can safely add it to your cart. In the following article we will tell you, what to serve mortadella with, and how to make a party salad out of it.
The original Italian mortadella comes from Bologna. Although it was known already in the 14th century, the official recipe for this meat specialty probably dates back to 1661. In Poland, it is associated with a cheap product of rather poor quality, but in sunny Italy of the 17th century, this meat was a delicacy of the nobility and townspeople. Its name probably comes from the vessel used for grinding meat, “mortarium”. Other sources attribute it to the Latin “farcimen myrtatum”, which means cold meat with finely ground meat with the addition of myrtle.
What is mortadella made of? This cooked, pink meat is made from very finely ground pork or a mixture of pork and veal. Mortadella is quite fatty because it also contains lard. It is seasoned with mustard seeds and pepper, and pistachios are also a popular addition.
Mortadellalike other cold cuts, works great on sandwiches. You can find it in Italian bakeries and restaurants panini, which are often served warm, are prepared with ciabatta and other additions such as mozzarella or tomatoes. It also tastes great on pizza, it is most often served with buratta, soft Italian cheese and pistachio pesto. He also prepares from it stuffing for ravioli and tortellini, i.e. the Italian variety of dumplings. You can also use it to prepare party salads. However, in this version Italians would probably not like it.
Salad with mortadella – recipe
- 220 g mortadeli,
- 100 g of yellow cheese,
- 4 pickled cucumbers,
- 1 shallot,
- 2 tablespoons of mayonnaise,
- 1 tablespoon of mustard,
- 1 clove of garlic,
- pepper to taste,
- a bit of lemon juice,
- chopped parsley.
Cut the mortadella and cucumbers into thin strips. Finely chop the shallot and grate the cheese. Press the garlic through a press. Place all ingredients in a bowl. Add mayonnaise, mustard, lemon juice, pepper to taste, and chopped parsley. Mix everything thoroughly.
