Chicken in bacon from an ovenproof dish. The rolls come out exceptionally juicy

Prepare chicken in baconwhen you need an exquisite dish and you only have basic products in the fridge. You don’t have to be a culinary master to make this dish a success. This recipe is simple and quick, and the dish looks very impressive. Wrapping the chicken rolls with baconyou will prevent it from drying out, and the aromatic mushroom stuffing with onion and Swiss cheese will introduce an element of surprise.

To prepare this recipe, you will need:

  • 4 chicken breasts,
  • 8 slices of raw or smoked bacon,
  • 1 white onion,
  • approx. 200 g mushrooms,
  • approx. 100 g of Swiss cheese,
  • 2 tablespoons of chopped parsley,
  • salt, black and herbal pepper,
  • 2 tablespoons of butter.

Serve the finished dish with mashed potatoes or fries. It will taste great with white cabbage and carrot salad, e.g. coleslaw.

Melt the butter in a large pan, add the peeled and finely diced onion, and after a while add the finely chopped or grated mushrooms. Simmer until the juice evaporates and the contents of the pan soften. Season with salt, black and herbal pepper.

Wash the chicken breasts, dry them, cut them in half to increase their surface area and lightly pound them with a meat mallet. Sprinkle salt and black pepper on both sides. Grate the cheese and finely chop the parsley. Add the ingredients to the cooled mushroom stuffing and mix. Spread the filling on each chicken breast and roll the chicken meat into a roulade. Then wrap two slices of bacon per roll.

Transfer the rolls to a baking dish (approx. 20 x 30 cm) and pour water up to 1/3 of the height of the rolls. Close the lid of the dish and put the meat in the oven preheated to 180°C for approx. 30 – 40 minutes. After baking, remove the chicken from the oven, open the lid and wait about 5 minutes. Serve the chicken with boiled potatoes, loose rice and your favorite salads.
