Ingredients for karpatka – dough:

  • margarine – 0.5 cubes
  • water – 1 cup
  • flour – 1 cup
  • eggs – 5 pieces
  • baking powder – 1 tsp

Ingredients for karpatka – custard cream

  • milk – 0.5 liters (3.2 percent)
  • egg yolks – 3 pieces
  • potato flour – 2 large spoons
  • wheat flour – 2 large spoons
  • margarine – 0.5 cubes
  • butter – 1 cube
  • powdered sugar – 1 cup
  • vanilla sugar – as desired

Start preparing the karpatka with the dough, because it needs to bake and cool down before applying the cream. Do not reverse the order and you will maintain the perfect consistency and taste of the baked goods.

Boil water and margarine. Pour the flour into the boiling water, mixing thoroughly. Let it rest on the fire until it forms a smooth, uniform massy, which you need to leave to cool. However, do not cool it completely, just add the eggs (one at a time) and mix everything so that they combine with the dough.

Add baking powder, a little salt and mix everything thoroughly. Divide the prepared dough into two parts and pour them onto two baking trays (25 x 35 cm) and put in the oven preheated to 180 degrees Celsius for 40 minutes.

While the cake is baking, you can start preparing the cream. To do this, mix egg yolks, vanilla sugar, flour and 1/2 cup of milk. Boil the rest of the milk and add it to the rest of the previously prepared ingredients.

A pudding should form, so give it some time to cool down. Mix butter, margarine and powdered sugar. Add the cooled pudding spoon by spoon to create a delicious mass.

Pour the cream onto one half of the cooled cake and spread it so that it sticks well and the cake does not get damaged when cutting.. Cover the karpatka with the second piece of dough, press it firmly and sprinkle the top with powdered sugar. The karpatka with the pudding mass should be ready.
