Cabbage soup that satiates and at the same time warms the body and soul – this is the cabbage soup according to Zdenek Pohlreich. This smoked meat and sauerkraut dish is not just any ordinary soup. There is no doubt that it can be a great mood lifter.

Who doesn’t love cabbage! In addition, Zdeněk Pohlreich has elevated this classic to an exceptional dish that will assure you that some dishes really have the power to kill a bad mood. When you cook it, you don’t have to worry about being hungry. This cabbage is so delicious that you definitely won’t want to give it up after the first plate.

The basis is a proper broth

The preparation of this dish begins with the base – the broth. First, prepare the smoked meat, which Pohlreich says can be either smoked knee or belly. This is boiled in water until it softens and releases its unmistakable juice. Once the broth is ready, it’s time for the sauerkraut. According to Pohlreich, the cabbage must be well squeezed so that it does not release too much acidity into the soup. And then it goes on its own. You add not only cabbage to the pot, but also chopped onion, garlic and carrot, which gives the soup both color and sweetness, which mixes pleasantly with the acidity of the cabbage.

A drop of cream to soften

After adding the potatoes and everything else, all that’s left to do is let the soup boil. And just when the potatoes begin to soften and the aroma of the popular Czech dish begins to waft in the air, it’s time for seasoning. Bay leaf, allspice and a little pepper – these are the basic ingredients that belong to this soup. Pohlreich also recommends a dollop of cream to soften the flavor. This step is optional, but definitely worth a try.

“When potatoes and cabbage are cooked in one pot, they remain hard on the surface and don’t taste as good. I recommend cooking it separately,” Zdeněk advises another trick if you have more time for the soup.

Serve with fresh bread

This soup doesn’t even have to be complicated to serve – just serve it with fresh bread. Remember that all the ingredients must be fresh and of good quality to make the soup perfect.
