Pork chops in mayonnaise marinated with onion are exceptionally delicate and soft. They literally melt in your mouth. Mayonnaise also makes the flavors blend and complement each other perfectly. This dish is certainly not boring or characterless. Although the combination of pork chops and the popular egg addition seems non-obvious, it is a very simple method to shorten the time needed to marinate meat. It’s also an interesting way to treat even a rather stringy piece of pork loin. The marinade will soften the meat and make it more juicy.
Ingredients:
- 500 g boneless pork loin,
- 3 onions,
- 100 g breadcrumbs,
- 2 eggs,
- 4 tablespoons of mayonnaise,
- a teaspoon of salt,
- a teaspoon of pepper,
- lard for frying.
How to do it:
Wash the meat and dry it with a paper towel. Cut them into cutlets about 1.5 cm thick. Beat each cutlet with a pestle quite thinly, but be careful not to tear the meat. Sprinkle them with salt and pepper on both sides. Place the cutlets in a bowl and add mayonnaise. Spread it with your hand to thoroughly cover all the cutlets.
Peel the onions and cut into slices. Transfer them to the bowl with the meat. Mix everything together, cover the bowl with foil and put it in the fridge for about 2 hours. Pour the breadcrumbs into a deep plate. In another plate, beat the eggs.
Melt the lard in a pan. First coat each cutlet in breadcrumbs, then coat them in egg and coat them in breadcrumbs again. Fry the meat in hot fat on both sides for a few minutes until golden brown. Serve pork chops in mayonnaise with potatoes and your favorite salad as a complete dinner dish.
