The basis of this dish are, of course, potatoes. This recipe is for two people, but you can modify it if you want to prepare more. Be sure to choose really large tubers. In Turkey, usually one the potato from which this dish is prepared weighs at least half a kilogram. To prepare two portions of kumpirs you will need:
- 1 onion,
- 1 red pepper,
- 100 g chorizo sausage,
- 100 g of yellow cheese,
- 2 large potatoes,
- 2 cloves of garlic.
You can also prepare vegetarian version of cupry. Just replace the chorizo sausage with the same amount of tofu. In this case, you will also need olive oil and soy sauce.

Wash and scrub the potatoes. Then cook them in their jackets in salted waterrinse with cold water, cut in half and hollow out. Time to prepare the stuffing. Onion, red pepper, chorizo sausage and garlic cut into small cubes. Add all ingredients to the pan and fry until golden brown. Add the scooped potato pulp to the pan and mix. Pour the stuffing into the potatoessprinkle them with grated yellow cheese and put them in an oven preheated to 200 degrees Celsius. Bake for a maximum of 10 minutes until the cheese is golden brown.

For vegetarian kumpiry, heat olive oil in a pan, add chopped onion, red pepper and garlic. Add crushed tofu and pour soy sauce over everything. Fry for a while. Then proceed as above – combine with the potato pulp, add the stuffing, sprinkle with grated cheese and bake. Serve Turkish potatoes with your favorite sauces. Tomato salsa or horseradish or garlic sauce will work great with kumpirs.. Enjoy your meal!
