faworki and pancakes are mandatory carnival desserts because they are deep-fried. This time we will focus on the last snack, which is aromatic, delicate and fluffy according to grandma’s recipe.. Moreover, it is very simple to make, which is why it has long been popularly prepared during carnival. Use your grandmother’s traditional recipe for the best yeast pancakes ever.
Yeast pancakes began to be baked in Poland in the 19th century. Previously they were called reczucha. This name came from the Ukrainian hreczuszki, but these pancakes were made from buckwheat flour.
Yeast fritters have become a permanent staple in Polish cuisine. They have gained particular recognition in Podlasie cuisinewhere they are still served at the end of Christmas Eve dinner.
From a traditional recipe, this carnival snack is made from flour, milk and eggs. We use yeast to loosen it. Of course, there must also be sweetener. Grandmas sprinkled these pancakes with powdered sugar.
Modern recipes use baking soda or baking powder. You can also add plums or apples to the pancakes.
Ingredients:
- 250 g of wheat flour;
- 120 ml of milk;
- 30 g of yeast;
- 3 eggs;
- 2 tablespoons of sugar;
- 1 tablespoon of butter;
- a pinch of salt;
- oil for frying.
Preparation:
To prepare yeast pancakes, First, we need to crush the yeast in a bowl and add to them: warm milk and 1 tablespoon each of wheat flour and sugar. Mix everything until dissolved. The leaven is prepared in this way set aside for 15 minutesso that the yeast can rise.
In the meantime separate the egg whites from the yolks and beat them with a pinch of salt until stiff foam is obtained. Gradually start adding the yolks and then the rest of the sugar.
Add the leaven and melted butter to the resulting mass. Then add the rest of the flour and mix thoroughly until the ingredients combine and form a smooth dough. Set aside for an hour to rise.
After this time start frying the yeast pancakes in a pan with heated oil until golden brown. Before serving, you can sprinkle them with powdered sugar, which is what grandma always did.
