We associate beetroot with the juicy, red variety that is used to prepare aromatic borscht or a healthy salad. It is worth getting interested in the vegetable’s cousin, i.e yellow beetroot and find out what its properties are. There are quite a few of them, just like there are uses in the kitchen.

If you haven’t heard of yellow beet yet, you’re not lost. It is already known in Europe – in Poland it appears more and more often in supermarkets and vegetable markets. You can buy it in organic stores or order it online (it is more expensive than the red one, costing about PLN 8 per piece).

Yellow beetroot is a variety of beetroot. It grows best in temperate climates. Spherical and smooth on the outside, 5 to 8 cm in diameter, with a thin root at the bottom and a medium-sized leaf rosette at the top. Inside it is bright, uniform yellow, with barely visible circles (after cutting into slices).

The taste of yellow beetroot is mild and slightly sweetclearly more delicate than the red variety. What’s more, yellow beetroot does not stain. This is great news for parents who want to introduce as many vegetables as possible into their children’s diet.

The vegetable is not only a culinary variety, but also a treasure trove of nutritional values. Thanks to them, the properties of yellow beetroot have a very positive effect on health. The vegetable contains only 43 kcal in 100 gramsincluding 1.6 g of protein. Yellow beetroot is a source vitamin C, antioxidants (including beta-carotene, betaxanthin), fiber, minerals (potassium, iron, zinc, magnesium and manganese) and folates. Yellow beetroot should be eaten by everyone who values ​​a balanced and healthy diet.

Thanks to its composition has anti-inflammatory and antioxidant properties. It delays the aging of the body and prevents the development of many lifestyle diseases (such as cancer, diabetes, Alzheimer’s disease and atherosclerosis). Potassium and magnesium they ensure the proper functioning of the cardiovascular systemamong others lowering blood pressure and improving circulation. Including vegetables in your diet it also supports liver health and protects against anemia. Yellow beetroot should be included in men’s diet due to its high zinc content. It will help them avoid prostate problems.

Vitamin C and antioxidants, in turn enhance the immune system response in case of infection, they have antibacterial properties and soothe inflammation. Yellow beetroot is one of the richest sources of folic acidwhich ensures the proper course of metabolic processes, stimulates the production of red blood cells and happiness hormones (serotonin and norepinephrine) and improves the functioning of the digestive system. Fiber is also good for the intestines.

Unfortunately, not everyone will be able to benefit from the properties of yellow beetroot. Who shouldn’t eat it? The vegetable is full of fiber, that’s why may cause severe flatulence in people with a sensitive digestive system. In addition people suffering from hypotension, i.e. hypotension, should also approach it with cautionso as not to harm your health.

In the store, look for beets with smooth and hard skin, without visible damage or stains. The smaller ones, about 5 cm in diameter, will be sweeter, so they are worth buying. At home, store yellow vegetables in a cool and dark place, such as a pantry or basement. Then they will stay fresh for up to several months. At home – put them in the fridge and use them soon. The vegetable can be frozen, but it is best after blanching (just boil for a few minutes and then quickly transfer to ice water).

How to use yellow beetroot in the kitchen? The inspiration may come from European, Asian and American cuisine dishes, to which it is often added. You can eat it raw or after heat treatment, i.e cooked (can be steamed) and baked (you can with the skin). It is best when peeled and fresh for salads, carpaccio or as sandwich decoration. In turn, it will be delicious when cooked an ingredient of soup or stew. it goes best with meat and fish dishes (from time to time it is worth making a purée from it) or vegetable casseroles. Yellow beetroot, due to its sweetish aroma, can be added to smoothies or vegetable cocktails.

Interestingly, just like red beetroot, it can also be prepared from yellow beetroot a lot. It has a more delicate taste and is worth drinking to support the intestinal microflora. This variety is also suitable for marinating. They need to be boiled and then placed in a vinegar marinade with spices.

What to add to yellow beetroot to make it taste even better? It goes perfectly with carrots, oranges, garlic, onions, olive oil, honey, arugula, nuts and strong cheeses (parmesan, goat cheese).
