Revealing a butcher’s master: These less popular pieces of meat should be eaten at least once a year

Dry and chewing pieces of meat. Quite often floating in the sauce of unpleasant colors. Not surprisingly, they can disgust you with any raw material, including often so much despised viscera. But it can be just a bad preparation. “If you don’t eat anything, go to the one who can prepare it well. Perhaps you will eat it suddenly, ”laughs František Kšána the younger, the main butcher of Amasso. Perhaps the guts that you think you should enjoy at least once a year are really good for the body.

Liver

Like all meat, they are a great source of protein. In addition, there are a lot of copper, iron and vitamin A. The amount of amino acids, which you will find from elsewhere, is also not negligible.

Kidneys

They contain really high amounts of vitamin B12, but also selenium – substances beneficial for the whole body and all its organs. You will also find a decent amount of anti-inflammatory substances and omega-3 fatty acids.

Heart

It is one of the richest natural sources of coenzyme Q10. This is the one that smoothes the skin, but also helps the proper activity of the heart and overall as a strong oxidant protects cells from aging. Like the liver, however, contains a lot of iron, zinc and selenium. And because it is a pure muscle, of course there is a lot of protein.

Cerebellum

You will get a decent portion of omega-3 fatty acids as well as phospholipids that protect the nervous system. According to some sources, the brain contains more cholesterol, so it is better not to overdo it.

Lung

In addition to vitamin B12 and iron, you may be surprised that they are quite a good source of vitamin C. And they do not have to be done only on cream – you can try them with wild spices and root vegetables.
